Eating the classic Tico meal, rice and beans, can affect your chances of developing diabetes.

Rice and beans are the staples in the comida típica of Costa Rica. But according to a recent study published in the American Journal of Clinical Nutrition, a high consumption of white rice is associated with an increased risk of developing type 2 diabetes.

People who ate more white rice over time had higher blood pressure, elevated levels of sugar and harmful fats in their blood, as well as lower levels of “good” cholesterol.

The study monitored the diet of approximately 2,000 Costa Rican men and women. It found that those who added an extra helping of beans instead of white rice to their diet lowered the risk of diabetes by 35 percent.

Rice is easily converted into sugar by the body, Frank Hu, a member of the research team, told Reuters. Hu said that a serving of white rice “is like eating a candy bar – the fiber and other nutrients are stripped away.”

Since beans contain lots of fiber and protein and have a low glycemic index, they induce much lower insulin responses.

As Costa Rica has become wealthier and more urbanized, rice consumption has risen while the intake of beans has fallen, the study said, adding that the diabetes rate in the country has soared.

Experts encourage substituting nutritious brown rice for white rice in meals.

That's fine, except the beans depicted in your graphic look to be pinto beans, which we would dearly love to have in Costa Rica, except the customs people confiscate the dry beans when we bring them in our luggage as being 'seeds.' Aren't black beans the mainstay of that beans 'n rice diet the Ticos prefer? As for sugar causing diabetes, Harry might consider doing some research.
Great article!!!
I had a good Tica friend who was having a lot of serious problems with vaginal infections. The Tico doctors here in this country treated here with some really harsh chemicals topically that created more pain and more problems. She moved to the USA some years ago and went to a GYN specialist there who advised her to stop eating so much rice and other starchy food, and treated her with other medications that she quickly responded to. She reduced her starch intake by eating smaller portions of starches, nearly eliminated rice out of her diet, and today eats more moderate levels of starch and lots more fruits and vegis and has not had any problems since making those changes. I am curious to know if the starch diets in so many countries are connected to these type of infections and if more vegis and fruits can be mixed in more to eliminate these problems on a more global basis?
well, I have lived in Costa Rica for 10 years and in my oppinion, it is not the white rice increasing diabetes cases but the white sugar they throw in their coffee. Rice is one of the main foods world wide, especially Asia and sure does not harm, especially when eaten in combination with vegetables, beans, meat or fish. People, just dont throw tons of sugar in your coffee and your problem is solved! :-)
